10 Tips for Making the Perfect Burger

Chef Jonathan Waxman shares his advice on how to make the perfect burger this grilling season


Undoubtedly one of the most frequently cooked items of the summer grilling season, burgers are certainly an all-American food. Of course, there is a wide range of burgers, from simple to complex, and ‘perfect’ arguably means a different type of burger for each person. There are thin, flat griddle ones and thick, charred burgers cooked on the grill. They can be topped with Maine lobster, dipped in French onion soup, or served straight up with just the basics (and maybe some gooey cheese on top).

Many chefs out there have mastered the art of the burger, whether it’s Linton Hopkins of Holeman & Finch down in Atlanta or Minetta Tavern in New York City, relying on their superior skills or the unique mix of the high-quality meats. But since most of us don't grind our own beef or plan to mix short rib into our patties, how can home cooks create this perfect burger at home?

We’re not talking about getting complicated, just the all-American basics to help you achieve that juicy, flavorful hunk of meat that satisfies like nothing else can. From finding the right ratio of lean to fat meat, mastering the technique of properly melting cheese (and avoiding the drip over into the grill), we’ve got tips and tricks from grill master Jonathan Waxman.

Celebrated chef and co-owner of Barbuto in New York City (and former Top Chef Masters cheftestant), Waxman shares his tips and advice on cooking the perfect burger so that any home cook can learn to master the art themselves.

1)Buy a Delmonico steak (2) Have your butcher grind it into burger
(3)Add sea salt--cracked black pepper-pinch of garlic powder(4) Pattie up (5) HOT WHITE COALS WITH HICKORY CHIPS (SOAKED IN APPLE JUICE) SMOKING(6)Burgers on--7 minutes per side--DO NOT COOK EITHER SIDE A SECOND TIME!!! In other words--flip ONCE. When u cry cause it's soooo good--thank me. Add only real Wisconsin Sharp Cheddar and your fav mustard

The slide show is stupid. I too am a relatively fast reader and couldn't keep up ... so I gave up ... No burger is good enough to wade through flip flopping back and forth with the slides. Beside there were no startling secrets about cooking a burger. If you can't figure that one out give up cooking and go to McDonalds.

Ditch the slideshow. Due to the quickly advancing slides, I became frustrated enough to stop with the third tip.

The slide show concept is ANNOYING, just as everyone else said. I read really FAST & I couldn't keep up either. The pause button is disabled, so that's just useless, too. Give the readers a slideshow option + a view all option w/ all slides on one page so the reader can view them in order @ their own pace. Defective slideshows, whether too fast or too slow are a waste of bandwidth & only irritate your target audience. Plus, it took 3 clicks to get from the Yahoo link to the actual slideshow thru 2 basically useless fluff "articles"

I found the tips and I figured out how to pause on each tip. I don't really care about the website issues. What bugs me is how all the tips were useless.

SLOW IT DOWN!! About wore out my 'Back' button! Put it all on a page or two and ditch the worthless slide show! Otherwise, this could have been an enjoyable, informative article.

The slide show moved too fast... I am fast reader. Even so, I had to re-open, repeat, many tines to have a chance to read the longer advices.

Agree, I hate it when they dictate how long a page should stay up before they auto load the next page. I had to keep going back to pause it to read it thoroughly. A 'Next Page' link would be preferable and that way a reader can spend as much or little on each page they choose. Navigation sucks.

what a bunch of freakin morons. you don't have to subscribe to anything. there's a tip with each photo, 10 solid tips. whoever is asking, "Where's the tips?" and sayiong they have to subscribe to read the story, you must be like on Mars or something. And, for the bigger morons that say it's too fast, as another poster told you, "There's a freaking pause button right above each freaking slide!" God, what a bunch of whiners. Great article. Good tips.

This was a really difficult story to follow. Clicking to proceed did litle good. Once I got past that guffaw, the pages flipped themselves faster than I could read them. But I suspect I've been making burgers long enough, that to try to slow it down won't really give me much info I don't already know anyway. Stop wasting your viewer's and reader's time.

The information was interesting, but I had to try and speed read the info. I'm not an especially slow reader.....I think someone is trying to be funny. It seems odd to me anyway that someone else would create a format where they decide how long I should spend on a page....stupid.

This site sucks. The screen keeps changing before you have even had a chance to read the text. i had to go back to the previous screen a dozen time to finish the article I'll never use this site willingly again.
